No rhyme or reason as to why I picked some of these
other than they sound good. They were pulled from winter recipes.
The recipe below serves 6
Ingredients:
2T evoo
1 chopped medium onion
1 chopped bell pepper
3 minced cloves of garlic
1T tomato paste
1lb italian sausage
1T chili powder
1tsp dried oregano
1/2tsp garlic powder
1/4tsp cayenne
kosher salt
black pepper
4 large sweet potatoes, peeled and cubed into 1" pieces
3c chicken broth
1 14.5oz can diced tomatoes
Create:
In a large pot over medium heat, heat oil. Add onion and bell
pepper and cook until soft, about 5 minutes. Add garlic and
cook until fragrant, about 1 minutes more, then add tomato
paste and stir until well coated. Add sausage and cook, breaking
up meat and cook until no longer pink. Add chili powder, oregano,
garlic powder and cayenne, sprinkle with salt and pepper.
Add sweet potatoes, broth and tomatoes and bring to a boil.
Reduce heat and let simmer, covered, until sweet potatoes
are tender, about 15 minutes.
Serve when ready.
