Ramen Carbonara

A lot of people like ramen noodles, but you don't have to

make them like the package suggests, give this recipe a try;

this recipe serves 4.

Ingredients:

3 ramen packs (discard seasoning)

1T evoo

6 slices of bacon, chopped into 1/2" pieces

2 minced garlic cloves

2 eggs

3/4c grated parmesan, plus more for serving

kosher salt

black pepper

1T fresh chopped parsley

Create:

Boil noodles according to package instructions. Save 1/4c of

cooking water to loosen sauce later, if needed. Drain noodles

and toss with evoo so they don't stick.

Heat a medium skillet over medium heat. Cook bacon pieces

until brown and crisp. Add the noodles to the skillet and toss with

the bacon until the noodles are coated in the bacon fat. Turn off heat.

Beat eggs with a fork and mix in parm cheese. Pour egg cheese

mixture to skillet and toss with bacon and noodles.

(The residual heat of the pan will cook the egg mixture, but

do not overcook or the eggs with scramble).

Divide between bowls, garnish with parsley and pepper.
