It's taco Tuesday, here is a seafood taco to change it up.
What you'll need:
2T simply organic seafood grilling seasoning
1 1/2lb flaky white fish
1/3c + 1T evoo
1/4c chopped cilantro
2 limes, juiced and zest from 1 lime
8-10 soft tortillas
2c chopped pineapple
1/2c chopped red onion
1/2c chopped red bell pepper
1/3c chopped cilantro
1/2 small jalapeno chopped
Directions to cook:
In a large storage bag combine 1/3c evoo, 1/4c cilantro,
juice from one lime, lime zest and seafood seasoning.
Place fish in a bag and seal.
Let marinate for at least 30 minutes.
Start your grill, remove fish from marinade and
grill fish for 3-4 minutes on each side.
Remove from the grill and let sit for a few minutes
then flake with a fork.
Make your salsa:
In a medium size bowl combine pineapple, onion,
red pepper and 1T evoo, 1/3c cilantro and the jalapeno.
Assemble your taco:
Grill tortillas for 30 seconds per side
Top tortilla with fish and salsa.
