What I am Thankful for November 11, 2020

Today, I am thankful for our vets. I have family that has served and I have met some great neighbors that I now call friends that have served. If it wasn’t for our military we would not have life as we know it. It’s a shame that there are people out there that don’t appreciate what these men and women have done for us. To all the branches and men and women thank you!

Jalapeno Cheddar Corn Pudding

We are again thinking outside the box for Thanksgiving sides, you don't have to make the traditional same sides every year. How about giving this one a try to spice Thanksgiving up? This recipe yields 10 servings. What you'll need: 1/4c jalapeno 1 can corn 4T butter, melted, plus more for the pan 3/4c heavy cream 2T cornstarch 2c shredded cheddar cheese 15oz cream style corn 6 eggs kosher salt Create: Using gloves dice the jalapenos. Preheat the oven to 350 degrees and grease a 9x13 baking dish with butter. In a large bowl, whisk the cornstarch into the heavy cream until smooth. Add 1 1/2c of cheddar, the creamed corn, fresh corn and jalapenos along with the melted butter, eggs and salt. Stir well, taste and add more salt if need be. Pour the pudding into the baking pan and top with the remaining cheddar. Bake until set around 45-50 minutes.

DIY Succulent Filled Pumpkin

Want to think outside of the box for fall/Thanksgiving decorations, well this is it. You still have your standard pumpkin but now you are adding something totally different. It is very easy to make...just carve out the top, discard the seeds. Add some rocks and or dirt and then add your succulents, the rocks and or dirt will help keep them in place.

Cheesy Mashed Potatoes

This week's recipes are all about different sides for your Thanksgiving meal. Some years I don’t feel like doing the traditional sides but yet want to try and keep it simple and tasty. This is one of my family’s favorites. What you’ll need: ~Potatoes (I normally make 2 per person) peeled and cooked ~8oz cream cheese ~8oz onion chip dip ~Garlic powder to taste ~Pepper to taste Create: Boil your potatoes until soft, mash your potatoes (however you normally do), I use a mixer. Add the cream cheese and chip dip and blend until smooth. Add your seasoning and mix again. You do not add milk or butter unless you absolutely need to.

DIY Floral Pumpkins

It's all about decorating for fall/Thanksgiving this month. Last week I brought you some cute and easy ideas, I am doing that again this week. This is an easy one, all you need is some pumpkins, some fake flowers and a hot glue gun. Get creative. Keep your pumpkin orange, or you can paint it white.
