We are again thinking outside the box for Thanksgiving
sides, you don't have to make the traditional same
sides every year. How about giving this one a try to spice
Thanksgiving up?
This recipe yields 10 servings.
What you'll need:
1/4c jalapeno
1 can corn
4T butter, melted, plus more for the pan
3/4c heavy cream
2T cornstarch
2c shredded cheddar cheese
15oz cream style corn
6 eggs
kosher salt
Create:
Using gloves dice the jalapenos. Preheat the oven to 350
degrees and grease a 9x13 baking dish with butter.
In a large bowl, whisk the cornstarch into the heavy cream
until smooth. Add 1 1/2c of cheddar, the creamed corn,
fresh corn and jalapenos along with the melted butter,
eggs and salt. Stir well, taste and add more salt if need be.
Pour the pudding into the baking pan and top with the
remaining cheddar. Bake until set around 45-50 minutes.
