Another low carb dish that I feel is also comfort foods.
What you'll need:
1/2c blanched almond flour
1/2c grated high quality parm cheese
1T dried italian herbs
1/2T crushed red pepper flakes
2 eggs
1/2c heavy cream
1/2c grated onion
1/2c whole milk ricotta cheese
1tsp salt
pinch of pepper
Create:
Preheat the oven to 400 degrees and line a sheet pan
with parchment paper.
In a medium mixing bowl, stir all of the ingredients except
for the chicken together using a fork until well combined.
Place ground chicken in a large mixing bowl, and stir in
the ricotta mixture with a fork using large circular
motions until well incorporated.
Using a 1/4c measuring cup, scoop balls onto the parchment
lined sheet pan. Try to space them out evenly,
it is okay if they touch.
Place in the oven and roast for 25 minutes, turning the pan
halfway through. Remove meatballs from the oven
and serve immediately.
