What I am Thankful for November 2, 2020

Just to note, I know this isn’t a “nature photo” I took it off

a cross at a church years ago, my dad is very religious and

I thought it was fitting.

Today, I am thankful for my dad. I had to start with him

first because he of course has been the one with me since

the beginning. When my mom was still with us they both

always did what they could to help out in any way.

They would take our eldest son for a week in the summer

and do fun things with him. When my mom passed he continued

everything that they did while she was still alive. He always

took Austin in the summer. We will also visit for a week in

the summer to help him out.

When my dad fell and broke his hip I became his caregiver.

Even though I started taking care of him he still does little

things just to help us out.

My dad has always stood by my side even when I wasn’t

deserving of it. He was a hard worker and the best dad

I could ask for. Thank you dad for always putting your family first.

Buffalo Chicken Nachos

Football has started so everyone wants something to snack on BUT I even look for something different for dinner. I tried to look up buffalo chicken shit on a shingle with no recipes but I came across this one. Now you can do the nachos or you can create your own shit on a shingle version with a piece of toast and melted cheese on top of the toast with the buffalo chicken on top...hmmmm... Anyways, here ya go. Recipe makes 6-8 servings. What you'll need: Nachos.... 1/3 - 1/2c you're favorite hot sauce 3c cooked shredded chicken 8-10oz tortilla chips 1 1/3 - 2c shredded Mexican blend cheese Topping.... 1/2c plain greek yogurt 3-5T more of hot sauce 3-4 green onions thinly sliced Create: Preheat the oven to 400˚F. In a medium bowl, mix the hot sauce with the shredded chicken until well coated. Set aside.
