Cheese Tortellini with Shrimp

  You can find this recipe at Cape May Cafe Beach Club at Disney. I haven't had the pleasure of eating at that restaurant but this sounds delicious! What you'll need: 1 pound Shrimp, chopped 2 pounds Cheese Tortellini 3 cups Seafood Béchamel Sauce 3 cups Brandy Tomato mix 1 Tablespoon Fresh Chives, small chop To taste Salt and Pepper Method of Preparation: To the Béchamel Sauce, add Brandy Tomato Mix, keep warm. Drop Tortellini in Pasta Pot Sauté shrimp until hot. Add heated Tortellini and Béchamel Brandy sauce to Shrimp and heat until 165°f. Pour into an oval pan and garnish with fresh chopped chives. Seafood Bechamel Sauce: ¾ cup Flour ¾ cup Butter 1 cup Heavy Cream 1 cup Milk 1 cup Clam juice To taste Salt To taste White Pepper Method of Preparation: Melt the butter in the kettle and add flour. Hocus Pocus Amuck Cocktail

  Who is ready for the new Hocus Pocus?? I am!!! I can't wait!! I am hoping Celeste likes it too. Counting down the days. So go grab your supplies and make your "Amuck" cocktail while you watch the old and new movie. What you'll need: 3oz Pineapple juice 3oz Orange juice 2oz Gold Rum – a dark color rum that has aged over time in wooden barrels and has a richer, sweeter flavor. 2oz Apple Brandy – clear to amber color and a smooth and rich apple flavor. 1oz Blue Curaçao – ordinary blue color liqueur with lower alcohol percentage that gives an artificial color to cocktails and mixed drinks. 1tsp Silver cake shimmer Create: Mix all ingredients together in a cocktail shaker and serve over ice topped with a cherry. Silver cake shimmer – edible sugar to add to drinks for a fun effect.

Encanto Inspired Arepas Con Queso

  All the young ones love Encanto. I myself love it as well. I enjoy watching it with Celeste. Her favorite song is We Don't Talk About Bruno and she dances its sooooo cute!!! I promised something to do with Encanto. I thought this recipe would be good. This recipe makes 6 servings. What you'll need: 2 cups masarepa (also called instant white corn masa) 10 oz. water 1/4 tablespoon butter 4 oz. oaxaca cheese 6 slices mozzarella cheese Olive or vegetable oil for cooking Create: Place the masa in a large bowl and mix in the water. Combine to form dough. It shouldn't be sticky, but should come together or stick together well. If the dough is too sticky add more masa and mix well with your hands. Let sit for five minutes. Mix the butter into the dough with your hands. Add the oaxaca cheese and mix well. Just One of Those Days

  I haven’t done a “Dear Diary” post in a while and I feel the need to today. I apologize that blog posts are just now going up. My old psychiatrist retired, which honestly I didn’t mind because I didn’t like her very much. I found a new one and of course have been going through medication changes. I don’t want to complain too much because with the medication change I have found the drive to want to do more, I haven’t felt as depressed (don’t get me wrong I still have my moments or days). Being bipolar even with medicine that works you’re never completely okay BUT there has been a good shift in moods. Lately though I have been dealing with the anxiety part which I believe stems from not sleeping well. I have turned into a very old lady. I am lucky if I make it to 9;00 at night. Honestly by 6 I am watching the clock begging my body to make it till 9 and I rise early. The downfall is I am tired all day. So there is so much I want to do now that I don’t feel as depressed but I am trap...

Disney Potato Bacon Soup

  This soup can be found at the Boma restaurant in the Animal Kingdom park. I thought this would be a good one to share seeing as how the cooler months are approaching us. Recipe serves 6 What you'll need: 2 ounces Onions 2 ounces Bacon Fat 2 ounces Flour 8 ounces White Wine 8 ounces Chicken Stock 8 ounces Heavy Cream 8 ouncesMilk ½ teaspoon Nutmeg To tasteSalt and Pepper 10 ounces Russet Potatoes, blanched 3 ouncesBacon Bits, save grease Scallions for garnish Create: Caramelize onions in rendered bacon fat. Add flour to make a roux. Cook until golden brown (blond.) Reduce wine by half and add to stock. Incorporate stock, milk, and cream to roux. Burr-mix the soup until it is smooth and has a creamy consistency. Adjust seasonings along with salt and pepper. Prepare service, add bacon and garnish with scallions.

DIY Jack Skellington String Garland

  You guys should know by now I am obsessed with Jack. I could watch The Nightmare Before Christmas on loop all day long. I love this DIY because you really can use it for Halloween or Christmas. What you'll need: white cotton string black felt water balloons liquid fabric starch Create: Blow up your water balloons so they are about 4 inches wide and tie off the ends. Cut the white cotton string into long lengths, about 5 feet long. You can always cut more.  Cut out the eyes, nose, and mouth template and trace them onto the black felt. Cut out the pieces. You will need a pair of eyes, a nose, and a mouth for each Jack Skellington string ball you wish to make. Pour liquid starch into a bowl. Place your balloon into the bowl. Dip the ends of your 5 foot white string into the bowl and wrap the string around your balloon, soaking the string in the starch before you wrap. Add more lengths of white string.
