Roasted Pumpkin with Feta & Honey

  Nothing says Thanksgiving like pumpkin, well maybe turkey. What you'll need: 1 1.5lb butternut pumpkin or squash 3T evoo 2T sesame seeds 3T honey 1T balsamic vinegar 2oz crumbled feta cheese 1/2tsp chilli flakes salt & pepper Create: Preheat the oven to 410 degrees, line a baking sheet with parchment. Peel the pumpkin and cut into bite sized cubes. Make sure you remove the seeds. Toss the pumpkin cubes in the oil and bake for 20 minutes. Remove from the oven and toss with sesame seeds. Put back in the oven for 10 minutes and roast. Drizzle with honey, balsamic vinegar, feta and chili flakes. Season with salt and pepper and serve.

DIY Pillar Candle Runner

Cheap, easy and chic... grab some fake vine, different sizes of white candles and some mini pumpkins and paint them white. Run it down the whole center of your table.

What I am Thankful for November 12, 2020

  Life, we rarely stop and smell the roses! We are normally so busy that we don’t sit back and relax and look around at all the blessings that we have. I may complain about aches and pains or having a bad day but each night I go to bed and when I pray I thank God for giving me another day.

Roasted Mushrooms in a Browned Butter, Garlic and Thyme Sauce

I absolutely love mushrooms and I have to say this would taste great with a turkey! This recipe serves 4 What you'll need: 1lb mushrooms 1T evoo salt and pepper to taste 1/4c butter 2 cloves garlic, chopped 1tsp thyme, chopped 1T lemon juice Create: Toss the mushrooms in the oil, salt and pepper to taste. Place on a baking sheet in a single layer and roast in a preheated 400 degree oven until they start to caramelize, about 20 minutes, make sure you mix them around about halfway through. Cook the butter over medium heat until it starts to turn a nice hazelnut brown, remove from heat and add garlic, thyme and lemon juice. Toss the roasted mushrooms in the butter and season with salt and pepper.  

DIY Turkey Mason Jar

  These would be cute near pumpkins. Another festive decoration and easy to make. What you need is the small mason jars, brown feathers (you can find those at Hobby Lobby, Michaels or other craft stores) and bronze spray paint. Spray the mason jars with the spray paint and let dry, fill them with feathers and you're all done.

Maple Roasted Carrots

  A lot of people serve carrots as a side for Thanksgiving, have you ever thought of doing maple roasted ones? Pretty easy... this recipe serves 4 sides. What you'll need: 1 bunch of carrots with the green tops, the thinner the better 2T evoo 2T dark maple syrup sea salt pepper Create: Preheat the oven to 425 degrees and take a baking sheet and line it with parchment paper. Whisk together maple syrup and evoo, toss to coat the carrots. Sprinkle it with salt and pepper. Put seasoned carrots in the oven for 35 minutes to roast, turning them halfway through.
