Loaded Buffalo Chicken Tots


 You can find these yummy looking tots at Friar's Nook at Disney's Magic Kingdom. I think I need to make these myself. LOVE anything with tater tots!!

Yields 6 servings


What you'll need:

Skinless/Boneless Chicken Tenders (1 1/2 lbs.)

Tater Tots

Garlic Ranch Dressing

Blue Cheese

Celery (4-5 stalks)


Ingredients for Buffalo Sauce:

1/3 cup Hot Sauce

1/2 cup Unsalted Butter

1/4 tsp. Worcestershire sauce

1/4 tsp. Cayenne Pepper

1/4 tsp. Garlic Powder

Dash of Paprika


Saute or bake the chicken. To saute, heat a pan on medium heat and add a little bit of olive oil and saute chicken pieces 3-4 minutes per side. To Bake, preheat the oven to 425 and bake for 15-20 minutes. Make sure chicken cooks to 165 degrees.


Bake Tater Tots according to package directions.


Chop cooked chicken into bite-sized pieces.


Dice celery.


Make Buffalo sauce.


In a saucepan over medium heat, combine the hot sauce, butter, vinegar, Worcestershire sauce, pepper, garlic powder, and paprika.


Whisk often as the butter melts and allow the mixture to come to a simmer.


Once the sauce comes to a simmer, remove the pan from the heat.


Allow the sauce to cool slightly. Add a dash or two of salt, to taste.


The sauce will thicken as it cools. Whisk the sauce before pouring over the cooked chicken pieces.


Combine chicken and Buffalo Sauce.


Load your plate. Layer the tots, then the chicken, drizzle with garlic ranch, and sprinkle the blue cheese and celery on top.

Apple Ginger Fizz for Fall

  The kids deserve a special drink for the fall besides apple cider. This is a great fall mocktail with a beautiful flavor combination. Not just for the kiddos. This makes 1 drink What  you'll need: 3 oz still apple cider 1 oz freshly squeezed lime juice 6 mint leaves 1 teaspoon apple cider vinegar Pinch powdered cinnamon 3 oz ginger ale Create: Place apple cider, lime juice, cinnamon, apple cider vinegar and a few ice cubes into a cocktail shaker. If you don't have a shaker, anything with a tight lid will work, such as a mason jar or drink bottle. Clap the mint together in your hands to release the scent, and add to the shaker. Shake for about 20-30 seconds until ingredients are combined. Pour into an ice filled glass and top with ginger ale. Stir gently, garnish with mint, dried citrus or a cinnamon stick, and serve.
