Ingredients:
Dressing:
1oz crumbled feta cheese
3T red wine vinegar
2T olive oil
1/2t minced garlic
1/4t dried oregano
1/4t black pepper
1/4t sugar
Salad:
8 cups romaine lettuce, torn into pieces
1 medium zucchini, julienne
1 red bell pepper, julienne
10 cherry tomatoes, halved
18 kalamata olives, pitted
Directions:
Process all dressing ingredients until smooth in a blender or food processor.
Place remaining salad ingredients into a large bowl, add dressing, toss and mix to coat. Serve immediately.
