We are almost wrapping up vegetarian and seafood week.
Today I am posting one of my favorite seafood's
and that is shrimp.
This recipe is very healthy for you and feeds 4.
What you'll need:
2lbs shrimp
2 small zucchini
2 small yellow squash
3 small bell peppers
3T evoo
2T butter
2 cloves garlic, chopped
1T paprika
1/2T cajun seasoning
salt & pepper
fresh parsley to garnish
How to make:
Cut the veggies into bit sized pieces. Place the shrimp
in a medium bowl, add the cajun, paprika,
salt and evoo, mix well.
Heat a large skillet over medium high heat, add the shrimp
and cook for about 6 minutes, remove the shrimp from
the skillet and set aside.
To the same skillet, add the garlic, butter and veggies.
Season with salt and stir fry for about 10 minutes or
until the veggies are tender.
Return the shrimp to the skillet, stir well and
garnish with parsley.
