We want our kids to be healthier and teach them
how to eat healthier. Which is why this week is all about
healthy snacks for the kiddos.
Today I bring you Aussie Bites
A.K.A Granola Bite Muffins.
What you'll need:
1c whole wheat flour
1 1/2c oats
1/2c brown sugar
1/2tsp baking powder
1/2tsp kosher salt
one stick unsalted butter, melted and cooled
1/4c honey
1/4c each of the following: sunflower seeds, flax seed,
shredded unsweetened coconut and golden raisins
Create:
Preheat the oven to 350 degrees. Add all the dry ingredients
into a large mixing bowl and whisk together.
Add melted butter and honey. Stir to combine with the dry ingredients. Then add the flax seeds, coconut, raisins and
sunflower seeds. Mix well to combine. The mixture will be
a bit dry and lumpy.
Place 1 heaping tablespoon of the filling onto a greased
mini muffin pan. Press the tops down to pack tight.
Bake in your oven for 12-15 minutes until golden brown.
You can keep them in a sealed container for up to a week.
