Pizza Skewers


This week we are doing recipes kids can make.

I am trying to find the easiest ones that are also

tasty and different. These look delicious and easy enough to make.

This recipe serves 4.


What you'll need:

1c marinara sauce for dipping

grated parmesan cheese

crushed red pepper flakes

1/3c olive oil

2T italian seasoning

kosher salt

all purpose flour for dusting

1/2lb pizza dough

1 pint grape tomatoes

12oz cooked sweet italian chicken sausage links,

sliced 1/2" thick

1lb fresh mozzarella sliced thin

1/2c fresh basil leaves

Create:

Soak 8 skewers in water for 30 minutes.

Prepare a grill skillet over medium heat. Cut a 12" square

of aluminum foil.


Stir together the oil, Italian seasoning and 1 tsp of

salt in a large bowl. Dust a work surface with flour.

Roll the dough into a rectangle about 11x6x1/4".

Using a pizza wheel or a knife, cut the dough into 1" strips

then into 1" squares. Add the dough squares, tomatoes

and sausage to the seasoned oil and toss gently to coat.


Thread the skewers alternating sausage, tomatoes and

dough squares. Leave 1/2" of the skewer on both

ends empty. Each skewer should have 4 pieces of

each sausage and dough and about 3 tomatoes.


Grill the skewers until tomatoes have gone soft and

the dough has started to puff. Put the prepared foil

square on the pan (if too big, tear some off). Place the

skewers onto the foil and top with the mozzarella cheese.

Cook until the dough is done and the cheese has melted.


Divide the skewers among 4 plates, tear basil leaves over the tops and serve with marinara.


These recipes, the kids can put together, pending age

they can cook themselves or with help.

Apple Ginger Fizz for Fall

  The kids deserve a special drink for the fall besides apple cider. This is a great fall mocktail with a beautiful flavor combination. Not just for the kiddos. This makes 1 drink What  you'll need: 3 oz still apple cider 1 oz freshly squeezed lime juice 6 mint leaves 1 teaspoon apple cider vinegar Pinch powdered cinnamon 3 oz ginger ale Create: Place apple cider, lime juice, cinnamon, apple cider vinegar and a few ice cubes into a cocktail shaker. If you don't have a shaker, anything with a tight lid will work, such as a mason jar or drink bottle. Clap the mint together in your hands to release the scent, and add to the shaker. Shake for about 20-30 seconds until ingredients are combined. Pour into an ice filled glass and top with ginger ale. Stir gently, garnish with mint, dried citrus or a cinnamon stick, and serve.

Chicken & Dumplings

This recipe is a Cracker Barrel Copycat. There is nothing more comforting (as far as comfort food goes) as chicken and dumplings, or at least that's the way I feel. Ready for the recipe? What you are going to need: 2c flour 1/2tsp baking powder 1 pinch of salt 2T butter 1c buttermilk 2 quarts chicken broth 3c cooked chicken Step 1: Start by boiling the chicken. Once the chicken is cooked, shred them into smaller pieces. Set aside and make the dumplings. Heat the 2 quarts of chicken broth In a medium bowl combine the flour, baking powder and salt. With a fork mix the butter along with the dry ingredients. Stir in the buttermilk with the dough until it forms like a ball. Knead the ball on a floured surface and use a rolling pin, with a pizza cutter cut the dumplings into squares (about 2” strips). Make sure you cut them about the same...
