Flank Steak with Goat Cheese on Toast

So how are you guys liking the taste of Spain so far?

I am eager to try some of these recipes. This recipe serves 6.

Ingredients:

1T smoked paprika

2tsp red chili pepper flakes

2T evoo

salt and pepper to taste

1 1/2lb flank or skirt steak

1 8oz jar roasted bell peppers, sliced

6oz goat cheese

1/2c fig jam of your choosing

1-2 loaves baguette

Directions:

In a resealable bag, mix together paprika, pepper

flakes, evoo, salt and pepper. Add the steak, seal the bag,

give it a shake and place it in the fridge overnight.

To cook the flank steak, heat up your grill 8-10 minutes

total for medium rare. Let your steak rest before slicing.

While the steak is resting, slice the bread into thin slices.

Toast the bread in the oven if you'd like.

Slice the steak very thinly, across the grain. Top each toast

with goat cheese, steak, a couple of red pepper slices

and your fig jam of choice.
