Christmas Tree Meringue Cookies

I love meringue, I don't know about you and your kiddos? I might make these just for me, especially since they are mint!!

What you'll need:

4 room temp egg whites

1c sugar

pinch of cream of tartar

1/8tsp of peppermint extract

green gel food coloring

star sprinkles

royal icing

Create:

Preheat your oven to 200 degrees and line a baking sheet with parchment paper.

Place egg whites, sugar and cream of tarter in a metal or glass bowl and set over a saucepan of simmering water. Constantly whisk until sugar is fully dissolved. Remove from heat and whisk in peppermint extract.

Using your whisk beat the egg whites until they are a bright white but still runny. Add in food coloring and continue to beat until stiff peaks have formed.

Place meringue in a piping bag fit with a large open star tip. Pipe 1" cones at least one inch apart. Bake for 2 hours. After the 2 hours open the oven door slightly and let the cookies cool in the oven.

Using a small amount of royal icing attach the sprinkles to the top of each tree. Make sure you store in an airtight container.
