Candy Cane Pots De Creme


Candy canes seem to be a staple at Christmas time. Do your kids

like peppermint? If so make them this special Disney treat.


What you'll need:

1tsp powdered unflavored gelatin

1T cold water

2c heavy cream

5 large egg yolks

1/4c sugar

3/4c chopped milk chocolate or milk chocolate chips

1tsp peppermint extract


Garnishes... whipped cream, crushed peppermint candy, chocolate peppermint bark

(all optional).


Create:

Stir together powdered gelatin and water in a small bowl. Let it sit

while cream heats (gelatin will solidify).


Heat heavy cream in a medium saucepan over medium heat until steaming, don't

bring to a boil. Once cream begins to steam, add gelatin and stir to dissolve.

In a separate bowl, beat together egg yolks and sugar until pail in color.


While whisking continuously, drizzle 1/2c of hot cream into egg yolk mixture.

Whisk remaining egg yolk mixture into hot cream, turn heat to low.


Continue cooking and stirring until mixture thickens enough to coat the back

of a spoon (155 degrees) about 3-4 minutes. Add chocolate to a large bowl and

pour hot cream mixture over chocolate.


Let sit for 1-2 minutes then stir well. Stir in peppermint extract.

Strain mixture through a fine mesh sieve to remove any lumps.


Pour into 4oz serving cups and refrigerate for at least 4 hours.


Serving:

Once pots de creme are firm, use a pastry bag with a star tip to pipea rosette

of whipped cream on top (or use reddi whip). Sprinkle with any garnishments

you may have chosen and serve.

Grab your mason jar and place the yellow mixture first, then the orange and then the white.

Apple Ginger Fizz for Fall

  The kids deserve a special drink for the fall besides apple cider. This is a great fall mocktail with a beautiful flavor combination. Not just for the kiddos. This makes 1 drink What  you'll need: 3 oz still apple cider 1 oz freshly squeezed lime juice 6 mint leaves 1 teaspoon apple cider vinegar Pinch powdered cinnamon 3 oz ginger ale Create: Place apple cider, lime juice, cinnamon, apple cider vinegar and a few ice cubes into a cocktail shaker. If you don't have a shaker, anything with a tight lid will work, such as a mason jar or drink bottle. Clap the mint together in your hands to release the scent, and add to the shaker. Shake for about 20-30 seconds until ingredients are combined. Pour into an ice filled glass and top with ginger ale. Stir gently, garnish with mint, dried citrus or a cinnamon stick, and serve.
