Fun in the Kitchen

I don't bake that often it's really during the holidays.

I can cook a 5 course dinner but banking is not really

my thing. If I do a pie it's always a no bake pie my

cookies however are always from scratch

along with my icing.

This year since I have my eldest son and my daughter in law

here we have split the baking up. I asked him to do the

traditional sugar cookie cutouts (he loves to decorate them)

and make my moms chewy noels. I am making (a recipe

my dad sent me last holiday) cool whip cookies and a

different type of dessert each week.

Last week I made apple dumplings and red velvet and

cinnamon cool whip cookies, this week I am making lemon

(which is a huge favorite in my house except the hubs) and

chocolate cool whip cookies and I made my eldest son's

family a no bake kit kat pie and I made a no bake mint

kit kat pie (my youngest and I love the mint kit kats).

Next week is a surprise for my family so I am not going

to post about that. Below is the recipes for the cookies and

the pies for you to enjoy.

Merry Christmas everyone!!

Cool Whip Cookies

This recipe yields 18-24 cookies

What you'll need:

1 box cake mix

(whatever flavor you like)

2 eggs

1 8oz container of cool whip

powdered sugar

Create:

Preheat the oven to 350 degrees, mix the cool whip,

cake mix and eggs together until blended completely. Pour

some powdered sugar into a bowl. Using a teaspoon, grab a

scoop of dough, flop it into the powdered sugar and roll

around until coated. Place cookie onto a cookie sheet

(I use parchment paper on my trays). Place about 2” apart.

Bake for 13-15 minutes, they can still be doughy they will

harden up but not too hard seeing as how it's cake mix.

If you go to make these and you like lemon flavored stuff

I'm telling you those are a must try!!!

Kit Kat no bake pies

What you'll need

1 chocolate graham cracker crust

1 8oz tub of cool whip

1 8oz tub of cream cheese

6 packs of kit kats (any flavor)

Create:

Put your kit kats in a zip lock bag, crush them up. Mix the

cool whip and the cream cheese together until blended well.

Sprinkle ¾ of your kit kats into the pie mixture and

stir around well.

Scoop your pie mixture out into the crust and smooth out

evenly. Once you are done top your pie with

remaining kit kats.

Put into the fridge for at least 3 hours before

serving and enjoy!!
