Ground Chicken Breast Chili




Ingredients:
1lb of ground chicken breast
1T Olive Oil
1 Can of Kidney Beans
4 Stalks of Celary
1 Red Bell Pepper
1 Can Crushed Tomatoes
1T Garlic
1 Large White Onion
1 Can of Chili Seasoned Diced Tomatoes
10 White Mushrooms (largely sliced)
1 Cup of Water
Seasoning:
2T of Chili Powder
1T of Italian Seasoning
1T of Oregano
1/2T of Paprika
1tsp of Cayenne Pepper
1tsp of Cumin
 
 
 
Directions:
Put 1T of olive oil into pot and add chicken. Break up into smaller pieces while cooking (I use an old potato smasher).
Chop onion and garlic and add to chicken, cook until onions are clear.
Add cans of crushed tomatoes, diced tomatoes, 1 cup of water and kidney beans. Chop up celery and add to pot.
Continue by chopping zucchini, mushrooms and red bell pepper and adding to pot as well. You can use a scale to measure exact weights used for this recipe but also add how uch of each ingredient you use.
Add chili powder, cumin, italian seasoning, oregano, cayenne pepper and paprika to taste.
Let it cook for around an hour or longer.
Serving Size: Makes 10 servings of 1 cup each.

Apple Ginger Fizz for Fall

  The kids deserve a special drink for the fall besides apple cider. This is a great fall mocktail with a beautiful flavor combination. Not just for the kiddos. This makes 1 drink What  you'll need: 3 oz still apple cider 1 oz freshly squeezed lime juice 6 mint leaves 1 teaspoon apple cider vinegar Pinch powdered cinnamon 3 oz ginger ale Create: Place apple cider, lime juice, cinnamon, apple cider vinegar and a few ice cubes into a cocktail shaker. If you don't have a shaker, anything with a tight lid will work, such as a mason jar or drink bottle. Clap the mint together in your hands to release the scent, and add to the shaker. Shake for about 20-30 seconds until ingredients are combined. Pour into an ice filled glass and top with ginger ale. Stir gently, garnish with mint, dried citrus or a cinnamon stick, and serve.
