Honey Dijon Salmon with Creamy Cauliflower Mash

 
This salmon looks so good! I've always wanted to try a cauliflower mash, if anyone tries this before me, let me know what you think!



Ingredients:



3c small cauliflower florets

1lb skinless salmon fillet

2T Grey Poupon Savory Honey Mustard, divided

1/2c philadelphia chive and onion 1/3 less fat cream cheese

2 green onions, sliced and divided



Directions:



Cook cauliflower in saucepan of boiling water 8-10 minutes or until tender. Meanwhile brush fish with half the mustard, place mustard side down in nonstick skillet, sprayed with cooking spray. Cook on medium high heat for 4 minutes. Turn fish, brush with remaining mustard. Cover and cook on medium low heat for 3-4 minutes, or until fish flakes easily with fork. Remove from heat, cover to keep warm.



Drain cauliflower, reserving 1/4c cooking water, place cauliflower in blender. Add reserved water and reduced fat cream cheese. Blend until smooth. Spoon into a bowl stir in half the onions and sprinkle with remaining onions. Serve with fish.

Cilantro Lime Chicken Drumsticks

This recipe is low carb and budget friendly. This serves 3 servings, so if you have more than 3 people in the house double it, heck double it anyways even if you don't and have leftovers. What you'll need: 2T evoo 4 cloves garlic, minced 1/2tsp cumin 1/2tsp salt black pepper 2 limes 1/2 bunch cilantro 6 chicken legs How to make: Combine the olive oil, minced garlic, cumin, salt, and some freshly cracked pepper (about 10-15 cranks of a mill) in a bowl. Use a zester, microplane, or small-holed cheese grater to remove the zest from one of the limes. Add about 1 tsp zest and 3 Tbsp juice to the marinade. Pull the leaves from 1/4 bunch of cilantro and chop finely. Add the chopped cilantro to the marinade and stir to combine. The other 1/4 bunch of cilantro will be added after baking.
