Pan-Roasted Chicken with Shiitake Mushrooms

What you will need:

3T flour, divided
4 small boneless skinless chicken breast
6T Kraft Asian Toasted Sesame Dressing, divided
1lb Shiitake mushroom, quartered
4 cloves of garlic, minced
1c fat free reduced sodium chicken broth
2T lite soy sauce


Directions:

Place 2T flour in a pie plate and add chicken, 1 piece at a time turning evenly to coat both sides of each breast.
Heat 2T dressing in a skillet on medium high heat. Add chicken, turn evenly to coat both sides with dressing. Cook 3-4 minutes on each side or until evenly browned on both sides. (Chicken will not be done), transfer chicken to plate, cover to keep warm.
Add 2T of the remaining dressing and mushrooms to skillet, cook 8 minutes or until golden brown, stirring occasionally and adding garlic for the last minute. Stir in remaining flour, cook and stir 1 minute. Add remaining dressing, broth and soy sauce, cook and stir 2 minutes or until slightly thickened.
Return chicken to skillet, spoon mushroom mixture over chicken, cook about 2 minutes or until done.

Apple Ginger Fizz for Fall

  The kids deserve a special drink for the fall besides apple cider. This is a great fall mocktail with a beautiful flavor combination. Not just for the kiddos. This makes 1 drink What  you'll need: 3 oz still apple cider 1 oz freshly squeezed lime juice 6 mint leaves 1 teaspoon apple cider vinegar Pinch powdered cinnamon 3 oz ginger ale Create: Place apple cider, lime juice, cinnamon, apple cider vinegar and a few ice cubes into a cocktail shaker. If you don't have a shaker, anything with a tight lid will work, such as a mason jar or drink bottle. Clap the mint together in your hands to release the scent, and add to the shaker. Shake for about 20-30 seconds until ingredients are combined. Pour into an ice filled glass and top with ginger ale. Stir gently, garnish with mint, dried citrus or a cinnamon stick, and serve.
