Turkey Melon Wraps




I figured with my youngest going back to school today it would be the perfect time to look up some healthy lunches to pack during this school year. Good Housekeeping  had 30 different ones to choose from, here is one of their recipes below.
 
 
Turkey Melon Wraps
 
 

Ingredients
0.25 Small Cantaloupe
1 Lavish (half a 14oz package of Soft American Flatbread
0.25c Bottled Horseradish Sauce
6 Large Green or Red Leaf Lettuce Leaves
12oz Thinly Sliced Deli Smoked Turkey Breast
 
Directions
Cut rind from cantaloupe; cut flesh crosswise into 1/4 inch thick slices (about 1 cup).
Unfold lavash. Evenly spread lavash with horseradish sauce; top with lettuce and turkey, overlapping to fit. On a short end arrange cantaloupe in single layer to cover half of the lavash.
Starting from end with cantaloupe, tightly roll lavash (jelly roll fashion). Trim ends if you like with a serrated knife. Cut roll into 4 pieces.

Cilantro Lime Chicken Drumsticks

This recipe is low carb and budget friendly. This serves 3 servings, so if you have more than 3 people in the house double it, heck double it anyways even if you don't and have leftovers. What you'll need: 2T evoo 4 cloves garlic, minced 1/2tsp cumin 1/2tsp salt black pepper 2 limes 1/2 bunch cilantro 6 chicken legs How to make: Combine the olive oil, minced garlic, cumin, salt, and some freshly cracked pepper (about 10-15 cranks of a mill) in a bowl. Use a zester, microplane, or small-holed cheese grater to remove the zest from one of the limes. Add about 1 tsp zest and 3 Tbsp juice to the marinade. Pull the leaves from 1/4 bunch of cilantro and chop finely. Add the chopped cilantro to the marinade and stir to combine. The other 1/4 bunch of cilantro will be added after baking.
