Slow Cooker Sweet Potato Chicken Curry




I am trying to find some different healthy dishes.
I don’t think I have done a curry one.
This recipe yields 6

2 tsp. Organic Valley Ghee

½ medium yellow onion, diced

3 garlic cloves, minced

1½ lbs. chicken breast, cubed

1 medium-large sweet potato, cubed

1 red pepper, sliced or diced

2 cups green beans, trimmed

1 cup organic low-sodium chicken broth

3 Tbsp. Simply Organic curry powder

1 tsp. Simply Organic ground cumin

1 tsp. Simply Organic ground turmeric

Pinch of Simply Organic cayenne (optional)

½ tsp. salt

1 (14 oz.) can full-fat coconut milk

Cashews, cilantro & cauliflower rice for serving




INSTRUCTIONS

In a small pan over medium heat, add the ghee,
diced onion, and garlic.
Sauté until onions are translucent.

In the slow cooker, add the sautéed onions and garlic,
chicken, sweet potatoes, red pepper, green beans,
broth, spices, salt, and pepper.

Cook on low for 4-6 hours.

Stir in coconut milk and cook on low for an
30-60 minutes or until hot.

Diced Italian Chicken

  Diced Italian Chicken   Ingredients   3lb boneless, skinless chicken breast 1/4c Kraft Balsamic Vinaigrette Dressing 1 bag of baby spinach 2 onions 1 jar of sundried tomatoes   Directions   Chop your chicken into little chunks and throw in a skillet, you do not need oil because your chicken is wet enough, cook over medium to high heat.   While your chicken is cooking start chopping your spinach, chop your onions and drain the oil off of the sundried tomatoes. Once the chicken is no longer pink add the balsamic vinaigrette dressing. Once the dressing is seared on add all your veggies and cook over low to medium heat for about 10 minutes.
