Spinach & Feta Crepes

This recipe would be good
for breakfast or dinner. I love
crepes and I love spinach
and feta! This recipe does serve
2 so you would need to adjust
for your family.

For the crepes:
1/4c milk
1/2c flour
1/3c water
1/8c melted butter
1tsp honey
pinch of salt
1T veggie oil
~extra butter for crisping the crepe

For the filling:
3/4c chopped spinach
6oz feta cheese
4oz whisked greek yogurt
2T honey

How to make:
Mix in the dry and wet ingredients
separately and the combine.
Gently whisk till no lumps
remain. Cover and put in fridge
for at least 2 hours.

Warm a flat pan over medium
high heat and grease with oil.
Pour about 2T of crepe batter
and twirl around pan to coat
the pan. Make sure the batter
spreads out evenly.

Flip the crepe and begin layering
the filling with spinach and feta.
Cover half the crepe with filling
and flip over the other half of
the crepe to the filled side.
FLip the crepe, greasing it
with butter and crisping to
your liking.

Serve with a dollop of greek
yogurt on the side and a

drizzle of honey.
