Spicy Shrimp Tacos with Garlic Cilantro Lime Slaw




I have been wanting to do a 
seafood taco for a while now.
I tried just a basic fish one
years ago and we were not
a big fan of them. I am definitely
going to give these a try though!

Yields 4 (2 small tacos each)

Garlic Cilantro Lime Sauce:
1/4c evoo
1/4c water
1/2c chopped green onions
1/2c cilantro leaves
2 cloves garlic
1/2tsp salt
2 limes juiced
1/2c sour cream or
greek yogurt

Shrimp Taco Spice Mix:
2tsp chili powder
2tsp cumin
1/2tsp onion powder
1/2tsp garlic powder
1/4tsp cayenne pepper
1tsp sea salt

For the Shrimp Tacos:
1lb shrimp, tails removed
2-3c shredded green cabbage
8 small tortillas

*Optional:
Avocados, Cotija Cheese
and Lime Wedges for serving

Sauce:
Put all your sauce ingredients
into the blender until mostly smooth.

Slaw:
Toss some of the sauce 
(not all) with the cabbage.
You'll use the leftover sauce
to top the tacos.

Shrimp:
Toss the shrimp in a small bowl
with the spice mix to get it coated.
Heat a drizzle of oil in a large
skillet over medium high heat.
Add the shrimp to the hot pan
and saute for 5-8 minutes
flipping occasionally. Until shrimp
is cooked through.

Assembly:
For the easiest to eat assembly
go in this order; smashed avocado
slaw and shrimp. Finish with
cotija cheese, lime wedges
and extra sauce.

Mama Mia Meatball Taquitos

Want something that is easy, sounds funny to kids and it should definitely be kid approved? Well here ya go, what kid doesn't love meatballs and taquitos? Recipe makes 1 dozen... Ingredients: 12 froze fully cooked Italian meatballs, thawed 2c shredded mozzarella cheese 1c ricotta cheese 1t Italian seasoning 12 8" flour tortillas cooking spray warm marinara sauce Directions: Preheat oven to 425, place meatballs in a food processor, pulse until finely chopped. Transfer to a large bowl, stir in cheeses and seasoning. Spread about 1/4c meatball mixture down center of each tortilla. Roll up tightly and place in a greased 15x10x1" baking pan, seam side down and spritz with cooking spray. Bake until golden brown, about 16-20 minutes and serve with the marinara sauce.

I absolutely love these! I love decorating for Halloween, I have to say it is my favorite holiday. I don't think you can have enough decorations up! So when I found this DIY project I just had to share!   DIY Cheesecloth Ghosts     You can find styrofoam mannequin heads at wig shots. They normally can stand on their necks but for this project you need to suspend them to let the cloth flow freely.
