Canadian Cheddar Cheese Soup





This week is all about Disney, if you  have never been
then you wouldn't understand why people scour the
internet for leaked or copycat recipes.

This one is perfect for the upcoming months when
it's cold outside and you want to warm up.
The recipe comes from Le Cellier Steakhouse at Epcot.

This mouth watering recipe serves 10...

What you'll need:
1/2lb bacon cut into 1/2" pieces
1 medium red onion cut into 1/4" pieces
3 celery ribs cut into 1/4" pieces
4T butter
1c flour
3c chicken stock
4c milk
1lb white cheddar grated cheese
1T tabasco sauce
1T worcestershire sauce
salt & pepper
1/2c warm canadian lager 
chopped chives for garnish

Create the magic:
In a 4-5 quart dutch oven, cook bacon, stirring over
medium heat for about 5 minutes or until lightly browned.

Add red onion, celery and butter and saute until onion has softened.

Add flour and cook, stirring constantly for about 4 minutes
over medium heat. Whisk in chicken stock and bring
to a boil for 1 min. Reduce heat to simmer and cook
for 15 min stirring occasionally.

Add milk and continue to simmer for 15 min.
Do not boil after milk is added.

Remove from the heat and add cheese, tabasco,
worcestershire, salt and pepper. Blend with a blender
until the cheese in melted and soup is smooth.
Stir in warm beer. If the soup is too thick,
thin with some warm milk.

Serve the hot soup garnished with chopped chives.

Chicken Meatballs with Quinoa & Curried Cauliflower (high calories)

Alright my dear friends, we have some in the group who are needing to maintain or gain some weight, so this week is going to be high calorie meals. I will have (high calories) posted in the title of the recipe. This recipe serves 1 so you will need to adjust depending on how many people will be eating it. There is 697 calories, 44g carbs & 72g of protein. DIY Tangled Inspired Paper Lanterns

  I am trying to pick some of the Disney movies a lot of kids love, for the week ahead. I love Tangled, I think the way they did it was great!
