This is a fast and easy asian inspired dinner,
recipe serves 4.
What you'll need:
1lb spaghetti
2tsp sesame oil
3 green onions, sliced
2tsp fresh minced ginger
1lb shrimp
kosher salt
black pepper
1T evoo
3 cloves of garlic, minced
2T cornstarch
1/3c soy sauce
1/2c chicken broth
1/4c sweet chili sauce
2T sriracha
2T rice vinegar
1/2c peanuts
2 bell peppers, chopped
*optional fresh chopped cilantro, for garnish
How to make:
Bring a large pot of water to a boil, add pasta and
cook according to package.
In a large skillet over medium heat, heat your sesame oil.
Add green onions and ginger, cook until fragrant (about 1 minute).
Add shrimp, then season with salt and pepper.
Cook until opaque (about 3 minutes) then remove from the skillet.
To the same skillet, heat evoo, add bell peppers and cook until soft.
Add your garlic and cook for about 2 minutes more.
Add the cornstarch and stir to combine. Pour in soy sauce,
chicken broth, sweet chili sauce, sriracha and rice vinegar,
whisk until combined. Simmer for 1-2 minutes.
Toss in pasta, shrimp and peanuts, garnish with
the fresh cilantro.
