This rice would be good in a mexican bowl dish or on the
side for any mexican or cajun dish. This recipe serves 6
Ingredients:
2T evoo
1 1/2c long grain white rice (you could use brown if you wanted)
1 minced clove of garlic
2 1/4c water
1tsp salt
zest of 1 lime
3T lime juice
1c chopped cilantro leaves
Create:
Brown the rice, heat the evoo in a medium saucepan
on medium high heat. Add the raw rice and stir to
coat with the oil. Cook stirring occasionally, until the
rice has started to brown. Now add the garlic
and cook for 1 more minute.
Add water, salt, zest and then simmer, bring to a rolling boil,
then cover and lower the heat to low to maintain a very low simmer.
Cook undisturbed for 15 minutes, then remove from heat
and let sit for 10 minutes. Once your 10 minutes are up fluff the rice with a fork.
Stir in lime juice and cilantro, mix and serve.
