Cilantro Lime Chicken Drumsticks

This recipe is low carb and budget friendly. This serves 3 servings, so if you have more than 3 people in the house double it, heck double it anyways even if you don't and have leftovers. What you'll need: 2T evoo 4 cloves garlic, minced 1/2tsp cumin 1/2tsp salt black pepper 2 limes 1/2 bunch cilantro 6 chicken legs How to make: Combine the olive oil, minced garlic, cumin, salt, and some freshly cracked pepper (about 10-15 cranks of a mill) in a bowl. Use a zester, microplane, or small-holed cheese grater to remove the zest from one of the limes. Add about 1 tsp zest and 3 Tbsp juice to the marinade. Pull the leaves from 1/4 bunch of cilantro and chop finely. Add the chopped cilantro to the marinade and stir to combine. The other 1/4 bunch of cilantro will be added after baking. DIY Jet Dry (Dishwasher Rinse Aid)

I get frustrated when I run out of Jet Dry, then I get frustrated when I go and buy it because I think the price for a tiny little bottle that doesn't even work that great anyways is crazy. So I did what I always do I found a DIY recipe and boy is it easy, it also costs you around .22 each cup! You can't beat that price!!! All you need is 1c of 3% Hydrogen Peroxide and 10-15 drops of your favorite scent of essential oil, which it's dishes so I would chose lemon. It's your choice and honestly you don't even have to use any! That's it, like I said can't get any easier than that! Happy washing!

My Personal Health Tip

This is a new one for me too, I guess I'm just full of different posts today lol.... The reason why I am posting a personal tip for the day is I have a few brain disorders. I am ADHD, Bipolar type 2, I think I have a touch of OCD as well. Recently though, well it started a couple years ago I started having severe pain in my shoulders, I also have tendinitis in my feet, my ankles hurt, my knees hurt, my lower back hurts and my fingers even hurt. On top of all that I am always severely tired, I feel ran down and feel like I haven't slept. When I lived in Ohio I was tested for a few things; Lupus & Sleep Apnea, both came back fine. Then I was tested for narcolepsy (which I knew I didn't have because I didn't just fall asleep out of nowhere). The pain and sleep issues got worse since I have been here in Virginia. I started getting cortisone shots in my shoulders. My last visit with my ortho dr. he ran blood and my RA levels were high so he sent me to a s

Intermittent Fasting & a Workout

This is a new type of post for me, I've never combined information on ways of eating with a workout post (you'll see why I combined them in a bit). There are different ways of doing intermittent fasting or as I like to call it “IF”. The easiest and what most people start with is the 16:8 that means you fast for 16 hours (which includes your sleep time) and you have an 8 hour eating window. So lets say I start my fast at 9:00pm that means I can't eat again until 1:00pm the next day. During your IF, you can drink but you should only take in black coffee, black tea or water. With that being said I can't drink plain water it gags me, I add a splash of lemon some people will say that breaks your fast some people say it won't. Ribbony Shrimp & Pasta Scampi

This delicious looking recipe yields 4 servings. I love doing recipe posts because I can't wait to cook them myself! What you need: 8oz whole wheat spaghetti 1 yellow squash 1 zucchini 1lb medium shrimp, tails removed black pepper 2T evoo 1c cherry tomatoes, halved 4 cloves garlic, finely chopped pinch of crushed red pepper flakes 1/2c low sodium chicken broth 2T chopped fresh chives How to make: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package directions for al dente. Normally about 10 minutes. While the pasta cooks, trim the top and bottom off of each squash. Peel the squash in ribbons into a colander, using a vegetable peeler, turning the squash as you peel. Stop peeling the squash when you only have the center core of seeds left. Discard the core and seeds. Reserve 1/4 cup of the pasta water, and then drain the pasta over the squash ribbons. Put in a medium bowl and toss to evenly dis

DIY Liquid Dishwasher Detergent

I have posted a powder recipe before which I have used myself but sometimes with the powder it leaves a residue so I have been wanting to switch to a liquid, I have found a very easy recipe. It does call for essential oils. The original recipe calls for 10 drops of grapefruit and 5 drops of thyme. I am going to use 15 drops of lemon in mine but you can pretty much use what you want, or none at all. This recipe will yield 3 cups, you can double triple etc but you will have enough supplies on hand to keep making just the 3 cups when you run out again. Materials: glass jar with lid or an air tight container 1c salt 1/2c borax 1/2c arm and hammer washing soda (it's down the laundry aisle, it's not baking soda} 1c water essential oils Directions: Combine all ingredients in a bowl and whisk to break up clumps as best as you can. Transfer your liquid into your jar or container. Use 2T per load. If your detergent starts to clump just add a bit more wat

Chicken Pepper & Corn Stir Fry

I love a good stir fry, really who doesn't? I honestly have never done one with corn though and this looks amazing! This recipe will serve 4 Ingredients: 3/4lb boneless skinless chicken thighs cut into 3/4" pieces 1 large egg white 2T Chinese rice wine 1T plus 2tsp cornstarch 5tsp low sodium soy sauce kosher salt 1T sugar black pepper 4T veggie oil 2" piece ginger, sliced paper thin 5 green onions, whites cut into 1/2" pieces and greens sliced, separated 2 red bell peppers, sliced 1c frozen corn kernels, thawed cooked brown rice for serving How to make: Toss the chicken with the egg white, 1 tablespoon each rice wine and cornstarch, 1 teaspoon soy sauce and 1/4 teaspoon salt in a medium bowl. Disney Lion King Grub Brownies

You can find these brownies at Disney World in Animal Kingdom, kids of course love them and so do adults, the best part is if you don't like gummy worms you can pick them off! These are very easy to make. Ingredients: 1 box of brownie mix 1 stick of butter softened 1 1/4c powdered sugar 1/4c cocoa powder 1T heavy cream 1tsp pure vanilla extract 1 1/2c crushed Oreo gummy worms for decorating How to make: Preheat oven to 350 degree using a 9”x13” pan line it with parchment paper and grease with cooking spray. DIY Unpoppable Bubbles Experiment

The solution for this recipe couldn't be any easier! All you need is; 2c water 1/4 dish soap 2T glycerin a few pipettes cotton gloves Now lets try to get this umpoppable bubble going.... Cut a pipette on the bigger end to act as your bubble wand. Not everyone has traditional bubble wands handy so these are available at a local craft store or even Walmart. They are super soft, acting as one more way to protect the bubbles. Fill your bowl with the water and then the dish soap. Stir very gently as you don't want to cause foam! Next add the glycerin. Most craft stores carry it or you can find it online. Walmart may even have it in their cake decorating aisle with all the Wilton's stuff. Now stir everything together again very slowly. The picture doesn't show the strawberries or syrup but trust me you don't want to eat it without it! You can only find Tonga Toast at the Coma Cafe at Disney's Polynesian Resort. I have had this stuff and it is French Toast on steroids, it is delicious! What you will need for the Strawberry Compote: 1 1/2c chopped strawberries 3T sugar 1T lemon juice 1tsp pure vanilla extract For the Toast: 1 loaf white bread, unsliced 2 bananas, sliced 4 large eggs 1c heavy cream 1T sugar 1tsp cinnamon 1tsp pure vanilla extract veggie oil, for frying 1c cinnamon sugar sliced strawberries for serving maple syrup for serving (Told you, it's on steroids) Directions: Make the strawberry compote; in a small skillet over medium heat, combine strawberries, sugar, lemon juice and vanilla. Bring mixture to a simmer and cook until the strawberries begin to break down and the mixture has thickened slightly, it takes about 5 minutes.
