Orange Ground Chicken



I don't know if you have a Panda Express near you, but if you do and you have tried their Orange Chicken you know it's the bomb! This recipe reminds me of their taste. Serve this over rice, will yield 4 servings.

What you need:
1lb ground chicken
1T ginger root minced
2tsp garlic minced
1/4tsp hot red chili pepper crushed
1T rice wine
2T water
1/2tsp sesame oil
4tsp soy sauce
5T sugar
5T white vinegar
zest of 1/2 an orange
1T water
1T cornstarch

Now it's time to cook:
To make the sauce combine the rice wine, 2T of water, sesame oil, soy sauce, sugar, white vinegar and orange zest.

To make the cornstarch mixture, dissolve 1T cornstarch in the remaining 1T of water and set aside.

To a large pan add 1T oil and ground chicken.

Cook until a good crust forms before breaking apart, then finish cooking by breaking it apart with a spatula and cooking for an additional 2-3 minutes.

Once the chicken is cooked add the ginger, garlic and crushed red pepper and cook for about 10 seconds.

Add the orange sauce and bring to boil.

Add the cornstarch mixture to the pan and cook for a just a few seconds, stirring until it thickens.

Mama Mia Meatball Taquitos

Want something that is easy, sounds funny to kids and it should definitely be kid approved? Well here ya go, what kid doesn't love meatballs and taquitos? Recipe makes 1 dozen... Ingredients: 12 froze fully cooked Italian meatballs, thawed 2c shredded mozzarella cheese 1c ricotta cheese 1t Italian seasoning 12 8" flour tortillas cooking spray warm marinara sauce Directions: Preheat oven to 425, place meatballs in a food processor, pulse until finely chopped. Transfer to a large bowl, stir in cheeses and seasoning. Spread about 1/4c meatball mixture down center of each tortilla. Roll up tightly and place in a greased 15x10x1" baking pan, seam side down and spritz with cooking spray. Bake until golden brown, about 16-20 minutes and serve with the marinara sauce.

I absolutely love these! I love decorating for Halloween, I have to say it is my favorite holiday. I don't think you can have enough decorations up!
