Bacon & Broccoli Rice Bowl



This recipe serves 4, it doesn't take long to make, it is filling and cheap it has 19g of protein!

What you will need:

4 large eggs
4 strips bacon
1c low sodium chicken broth
2T low sodium soy sauce
2T rice wine vinegar
1T light brown sugar
kosher salt and black pepper to taste
5c cooked brown rice
4c small broccoli florets
4 scallions, sliced, white and green parts separated
1 medium carrot, shredded
2T toasted sesame oil

Directions:
Cover the eggs about 1" of water in a small saucepan, bring to a high simmer, cover and remove from heat. Let stand for 8 minutes, run under cold water, peel and quarter each egg.

Meanwhile, arrange the bacon in a large skillet and cook over medium heat until crisp. Remove the bacon from the skillet, let it cool and chop into bite size pieces.

Whisk together the chicken broth, soy sauce, vinegar, brown sugar, 3/4tsp salt and a couple pinches of pepper into a large microwave safe bowl. Add the rice, broccoli and scallion whites and toss to combine. Cover and microwave on high stirring occasionally until the broccoli is crisp and tender and the rice is warmed through. This will take about 6 minutes.

Divide the rice-broccoli mixture among four bowls. Top each with a quartered egg, bacon, carrot and scallion greens. Drizzle each with sesame oil.

Fall Simmering Potpourri

I love the smell of fall, I even like fall itself.  I just don't like what follows... winter!  However I love walking in my home and smelling  the fall scents that are so warm and inviting. Making this simmering potpourri is extremely easy! What you'll need: Tangerine or orange peels Cloves Cinnamon sticks or ground cinnamon Vanilla extract Pumpkin pie spice Water Small crockpot, saucepan or tea kettle You can choose how much you want to put in  of what, there really is no magic amount. I normally put  in more of my favorite scents. If using a tea kettle  or a sauce pan keep in mind you will have to keep  adding water to it. If you use a crockpot you  will not have to keep adding water and you can keep  it on even when you're asleep.
